Exploring Indonesian Cuisine
A second article on exciting international cuisine is inspired by a piece in the New York Times about a restaurant in Queens.
Awang Kitchen sounds fabulous –
Chicken is poached in coconut water for tenderness and a hint of sweetness. Catfish is saturated for hours in lemon and lime, then fried and smacked with the back of a spoon, so the sauce can find crannies and soak through.
You can read the article here but as most of us probably going to be in Queens in the near future, I’ve found a rather inspirational Indonesian inspired dish a little closer to home. This is Nasi goreng with lime and sugar barbecued chicken, a recipe by Rick Stein on the BBC website.
This is such an exciting cuisine that can be easily recreated at home and deserves to be enjoyed by everyone.
