The dish shown looks spectacular and I would love to try it but I think its way beyond my skills to recreate but the article talks in detail about the whole cuisine and how it is developing and makes for a very interesting read. It also includes a simpler and delicious recipe which you reach direct below as well as in the article.
One of the best things about running a speciality cookware shop is the enthusiasm and adventurous nature of fellow cooks and if you find there is some specific piece of equipment needed for a recipe I can always try to source for you. I do like a challenge!
